Make Chef TV’s delicious recipes in your own kitchen for a taste of the Tides!

Mango Habanero Ketchup 

A delicious and spicy condiment to pair with your favorite grilled meats. 

2 tbsp olive oil

2 cups onion (diced)

4 cloves garlic (finely chopped)

½ tsp ground cinnamon

½ tsp allspice

2 small habanero peppers (seeded and finely chopped)

4 large mangoes (peel, remove seeds and dice)

1 tbsp Dijon mustard

¾ cup red wine vinegar

salt & pepper to taste


Heat oil in a saucepan over medium heat and add the onions and garlic, cook until soft. Add the cinnamon, allspice, and habaneros and cook an additional 3 minutes. Add the mango and continue cooking an additional 5 minutes until soft. Remove from heat and add the vinegar and mustard and process with a hand-held immersion blender. Season with S&P. Cool until ready to use.


Quinoa-Edamame Salad with Cilantro Lime Vinaigrette Topped with Fresh Local Asparagus

1 cup Quinoa

2 cups water

2 cups corn (roast and remove kernels)

1 ½ cups black beans (drain and rinse)

1 ½ cups edamame

1 cup red bell pepper (remove seeds and white parts, fine dice)

1 cup chopped cilantro

6 each green onions (sliced)

1 garlic clove (minced)


For the Vinaigrette:

½ cup fresh lime juice

3 tbsp white vinegar

1 cup chopped cilantro

2 tbsp brown sugar

1 clove garlic minced

1 tbsp Dijon mustard

1 cup olive oil

s&p to taste


To make the dressing:

Place all the ingredients except the oil in a bowl or processor, blend well slowly streaming in the olive oil until emulsified, season with s&p to taste.


For the quinoa:

Place water and quinoa in a small saucepan and prepare according to directions simmering approximately 15 minutes, when tender strain any remaining liquid in a fine sieve.

Meanwhile, transfer remaining ingredients to a large mixing bowl, add the quinoa and gently blend with half the vinaigrette.


To serve:

Place salad in a serving dish and top with fresh blanched asparagus, dress with some of the remaining vinaigrette.

Friday, April 15th 

3:30 pm – Arrive at the Tides Inn and stroll around the beautifully-landscaped grounds as you take in views of the river.

4:00 pm – Check in to your comfortable guest room and freshen up for dinner.

5:30 pm – Aren’t you glad you purchased your Devils Backbone Brewmaster Dinner tickets in advance? Now you can just kick back, relax and enjoy the deliciously-curated, four-course tasting menu presented by Chesapeake Restaurant and Devils Backbone Brewery. For a sweet ending to your meal, savor Gourmet S’mores paired with Black Rock Milk Stout.

10:00 pm – Crawl into crisp, white sheets and drift off to sleep, knowing the fun will continue tomorrow!

Saturday, April 16th 

8:30 am – Start your morning with a rich cup of coffee and a stroll along Carter’s Creek.

9:00 am – Breakfast is served at Chesapeake Restaurant! Want to sleep in and enjoy a morning in bed? Order room service and have one of our many delicious dishes delivered to your door.

11: 00 am – Make your way outside for the Taste of Spring Festival. Buy your ticket (unless you already purchased one in advance) and enjoy an afternoon of unlimited beer tastings, food from local restaurants and vendors, and the rhythmic sounds of the Slapnation Band. Set out on a Cove Cruise and learn about the history of the area as you relish in the beautiful scenery.

5:30 pm – Sit by the fire pit, glass of wine in-hand, and watch the sun set behind the lush, green shores of the Rappahannock. Still hungry? Enjoy a few appetizers from Chesapeake Restaurant as you reminisce about the day.

Evening – The night is yours to enjoy! Take advantage of a fun activity on property or relax and do nothing at all.

Sunday, April 17th 

10:00 am – End the weekend at our Sunday Brunch, featuring a newly-developed spring menu of delightful dishes.

12:00 noon – Head to Golden Eagle Golf Club for a round of golf on our beautifully-landscaped course or do a quick practice session on our complimentary Par 3, nine-hole executive course.

4:00 pm – Travel safely home with new memories of a fantastic time at the Tides!

TTI collageWith the Tides Wellness Weekend right around the corner, we asked Danielle Fryer, Fitness & Wellness Director at Mii amo destination spa, for her favorite health tips for spring. From March 18th-21st, Danielle will be at the Tides leading the Wellness Weekend programming, which includes yoga, fitness sessions, lectures and more! Below are the top three trends Danielle is living and loving right now.

  1. Fresh Smoothies | Because there is nothing easier than throwing a bunch of nutrient-rich ingredients into a high-powered blender in order to nourish and flourish. Include no more than three main ingredients in order to keep things yummy. Water and ice are always a good base. Add one or two fresh fruit choices and one giant serving of greens, my favorites are spinach and kale. For extra energy, add chia seeds and a high-quality protein powder. Smoothies make for a simple, delicious and nutritious on-the-go meal replacement.
  1. Outdoor Yoga | Whether you are participating in an instructor-led class or practicing at home with pets by your side, spring is the perfect season for rolling out your yoga mat in an outdoor space. There is huge value in using your own weight to tone and strengthen your entire body and fresh spring air is the perfect complement to a great workout.  For those practicing from afar, take advantage of one of the many yoga instruction sources online and nurture your body and soul as you relish in the season’s beautiful weather.
  1. Slacklining | It has never been acceptable to be a slacker, until now! In my opinion, slacklining was the freshest, most innovative fitness concept presented at the recent IDEA World Fitness Conference I attended. Slacklining is a fun, innovative and functional way to train your whole body. Slacklining makes you work your deepest, intrinsic core muscles with a huge childlike grin on your face! It also promotes and encourages breath work, balance and can even improve mental and emotional strength.

As we await warmer days, vibrant blue skies and beautiful budding flowers, we share with you one of our favorite spring recipes. The Tides is known for its delicious, seasonal cuisine, which incorporates a bounty of fresh produce sourced from local farms. Make this dish at home for an authentic taste of spring at the Tides! The Tides Inn

Roasted Asparagus with Fresh Herb Gremolata

When choosing asparagus, look for straight, firm stalks with tips that are closed and either dark green or purple.

2 bunches medium asparagus
2 tbsps extra virgin olive oil
1/2 tsp pink sea salt
Freshly ground black pepper

Trim the woody ends of the asparagus. Lay the spears on a sheet pan and drizzle with olive oil, and season with sea salt and pepper. Roll spears around to coat evenly. Place pan in a 450-degree pre-heated oven and cook approximately 10 minutes or until just tender. Shake pan to move spears around while roasting.

Note: This same seasoning can also be used for grilling.

For the Gremolata:
1/4 cup chopped Italian parsley
3 tbsps finely grated lemon peel
2 garlic cloves, finely minced
1 1/2 tbsps chopped thyme
1 1/2 tbsps chopped basil
1 1/2 tbsps chopped chives

Mix all ingredients in a bowl (can be made a day in advance and kept in refrigerator).

Arrange asparagus spears on a platter and top with Gremolata.

Virginia’s Chesapeake area is a beautiful place to sail, and it’s a pastime that can be shared by the entire family.  Let us teach you how!

Premiere Sailing School is located on-site at the Tides Inn and offers classes for children, adults, families and corporate groups.   Their fleet of boats includes the small, child-friendly Sunfish, Laser and Optic boats and larger sailboats, racing boats and powerboats. The gentle, sheltered waters of Carter’s Creek are perfect for beginners to learn the basics before sailing out to the wider Rappahannock River.

Enjoy a half-day lesson sailing on the water, or plan a longer stay to master certification.  Our Learn to Sail Package includes two days of lessons, accommodations, breakfast and box lunches for the boat.

Virgina’s craft beer industry has been growing not only in quantity but quality in recent years.  The Virginia Craft Brewers Guild reported that the Commonwealth is now home to  100 craft breweries. They’ve won medals in national competitions and starred in a short-form documentary “From Grain to Growler” chronicling the rise of craft beer in the Commonwealth.

Some of these will be represented at the Tides’ spring festival April 8-12, 2015, a series of events themed around the flavorful artisan industry, including a demo class on cooking with beer, a hands-on class in pairing food with beer, and a locavore dinner and oyster roast paired with craft beers.

Saturday’s event, “Taste of Spring: Brews, Buds, Bites” welcomes the glorious spring season with an outdoor event on the banks of Carter’s Creek.  One ticket includes 10 tastings of craft beers, and there will also be local wines, hard cider, and regional fare and great music. An in-water boat show and garden show add to the festivities, providing plenty of reasons to get outdoors and socialize.
